Fun Friday: Baking Christmas Cookies [VIDEO]
ST. CLOUD - This week on our Holiday themed Fun Friday series we are baking Christmas cookies. I invited my friend Cady Sehnert to my house to bake strawberry and mint jam thumbprint cookies. Every year my mom and I bake these cookies this year I decided to share the tradition with Sehnert.
Baking these cookies can be a bit tricky but if you follow the recipe they will taste great.
In a large bowl whisk together 1 3/4 cup flour, 1/2 teaspoon baking powder and 1/2 teaspoon salt.
In a separate bowl mix together (with hand mixer or stand mixer) 1 1/2 sticks of butter, 2/3 cup of sugar, 1 teaspoon of vanilla extract and 1 large egg.
Slowly mix in dry ingredients until dough forms.
Roll cookies into 1 inch balls (optional-roll balls into sugar) and place on cookie sheet. Before baking make a thumbprint in each cookie.
Bake at 350 degrees for 12-15 minutes. Let cookies cool and then top with favorite jam.
We topped ours with mint and strawberry jelly. Mint jelly is available at most grocery stores during the holiday season.
