CRUISE SHIP OR NURSING HOME- True Essentials of a Maximized Life

My good friend Evan Eigen at Legacy Family Chiropractic, a maximized living clinic based right here in Waite Park, has this wonderful plan that works! What better way to get healthy and lose weight, than to be able to eat as much as you want, and have food that tastes fantastic!

I was able to participate in a group that each took home a recipe from the book, "Cruise Ship or Nursing Home - True Essentials of a Maximized Life," and we had a potluck dinner. On the table were main dishes, sides, appetizers, desserts.  I brought my youngest teen, and I was amazed at the delicious foods that everyone made, that were healthy, tasty, and easy to fix.   • 1 Tbs. Coconut Oil
  • 1/2 cup chopped onions
  • 2 chopped garlic cloves
  • 1-1/2 chopped celery
  • 1 cup chopped green pepper
  • 1-1/2 lbs ground beef or bison
  • 2 tsp thyme leaves
  • 2 tsp chili powder or more if you like
  • 2 tsp cumin
  • Salt to taste
  • 1 8 oz can chopped tomatoes
  • 1 12 oz of salsa (all natural)

In large skillet, saute` onions, garlic, celery and pepper in oil til tender. Add meat, thyme, chili powder, and cumin and stir frequently for 5-6 minutes. Add salt, tomoatoes and salsa, tomatoes and salsa to pot. Cover and simmer for an hour. This can also be cooked all day in the crockpot on low.
